Recipe of the Week
Baked Oysters

Ingredients:
2 slices bacon, diced 
1/2 cup butter 
1 medium onion, diced 
2 stalks celery, diced 
1 garlic clove, crushed 
3 tablespoons flour 
salt 
fresh ground black pepper 
1 pinch cayenne 
1/2 teaspoon dried thyme 
1 (8 ounce) bottle clam juice 
1/4 cup dry sherry 
1 1/2 cups heavy cream 
1 (12 ounce) can evaporated milk 
16 ounces shucked oysters, with their liquor 
3 dashes Worcestershire sauce 
1/2 cup parsley, finely chopped 
 
Directions:
Sauté diced bacon in a non-stick soup pot over low heat until rendered. Add butter and heat until melted. Add onions, celery and garlic and continue to cook over low heat, stirring occasionally, until translucent, taking care not to let them brown. Add salt and pepper to taste, pinch of cayenne, thyme and flour, whisking steadily to make a roux. Cook, whisking steadily, for several minutes. Slowly whisk in clam juice, whisking until smooth, then sherry, whisking until smooth. Whisk in cream, whisking until smooth, then whisk in evaporated milk, whisking until smooth. Raise heat slightly, stir while bringing just until it starts to boil, then lower heat and whisk until slightly thickened, about 5 minutes. Stir in oysters with their liquor, several dashes of Worcestershire sauce and the chopped parsley. Continue to heat, stirring occasionally, until oysters curl at the edges indicating they are heated through.

Drinking on the Water
 
This summer there has been some heavy press regarding drinking and on the water activities here in the Lowcountry.  The attention began with large organized parties of tubers floating down the Edisto River over the 4th of July weekend.  Many floaters were consuming large amounts of alcohol resulting in issues with violence, underage drinking and littering.  The shift then moved to Aquapalooza the weekend before last then this past weekend to Rockville Regatta where there were over 6 arrests for boating under the influence.   When I saw the photo below I thought it may have been a local shot at first.  Even though these events have come and gone here in the lowcountry for this summer I found the article below to still be very informative and wanted to pass it on to our readers.  So please catch this week’s press release from Boat US.

The Final Word
Weather has been good for fishing over the last week as long as you are willing to brave the heat and a few heavy storms that have passed through. There is plenty of bait in the creeks currently and the inshore action has been great for the Flounder and Reds.  The Sheepshead bite remains good at the jetties and around other structure in the harbor and the Spanish are still schooling up good in the inlets.  Tarpon action remains good on live bait in the inlets and shallow slews behind the breakers.    
 
Offshore there continues to be some great reports of released billfish and the dolphin bite remains good.  The Cuda are in thick as well as some nice sized kings.  Get out and get on them!
